Simple Lobster Roll Recipe

Ingredients

  • 1 pound cooked lobster meat (the fresher the better, can be from the claws or legs so you can save the tail for dinner)
  • 6 top-split hot dog rolls (New England style buns)
  • ½ cup mayonnaise
  • 1 tbsp fresh lemon juice

Cut the lobster meat into ½-inch pieces and place them in a mixing bowl. Add mayonnaise and lemon juice. Toss well.

Butter and toast the hot dog rolls in a skillet. Using a small spoon, gently place the lobster in the rolls, being careful not to break them. Serve immediately.

Serves 6.
