Poutine
Poutine Recipe (pronounced PUTZ-inn)
Ingredients
- 1 quart vegetable oil for frying
- 1 (10.25 ounce) can beef gravy
- 5 medium potatoes, cut into fries (scrub them well but leave the skin on)
- 2 cups cheese curds
Instructions
Heat oil in a deep fryer or deep heavy skillet to 365 degrees F (185 degrees C). While the oil is heating, warm the gravy. Place the fries into the hot oil, and cook until light brown, they should be fairly crisp, about 5 minutes. Make the fries in small batches if necessary.
Remove to a paper towel lined plate to drain excess oil. Spread a layer of fries on a plate. Sprinkle with cheese curds. Ladle gravy over the fries and cheese, and serve immediately. The heat from the gravy and the fries will make the cheese melt. It will be an ooey-gooey mess* but it should taste oh, so good!
Serves 4. Can substitute frozen, thick cut fries although having the skin on adds to the flavor. Can substitute jack or muenster cheese for the cheese curds.
Not a low-fat, diet friendly food. Known to take the chill off a cold winter’s day.
*Ça va faire une maudite poutine. (“It will make a hell of a mess.”)
