Erin’s Pico de Gallo

Ingredients

  • 6 tomatoes, chopped
  • 1 large white onion, chopped
  • 1 large jalapeƱo, seeded, minced
  • 3 cloves garlic, minced
  • medium bunch cilantro, diced (optional)
  • salt to taste
  • 1/4 lemon (or 1/2 lime), seeded

Toss all ingredients together in a non-metal bowl, squeeze citrus juice over the top. Chill. Serve with tortilla chips. Will keep for a couple days. Yes, it is garlicky but garlic is good for you!

Serves 6.
