Colcannon
Colcannon is a mixture of potatoes and cabbage that is a traditional Irish dish. Add some chopped boiled beef and you’ll have a dish known as Bubble & Squeak. There are many variations of this simple dish, here is one of them.

Serves 4-6
Ingredients
- 1 small head cabbage
- 1 pound potatoes (4 or 5 medium ones)
- 2 Tbs butter
- 2 Tbs sour cream
- 1 large onion, chopped
- Milk
- Salt and pepper to taste
Instructions
Clean the cabbage and chop into small pieces. Cook cabbage in lightly salted boiling water until tender, about 20 minutes. Drain well. Meanwhile, peel the potatoes and cook in lightly salted boiling water until tender. Sauté the onions in the butter in a small skillet until soft and slightly caramelized. When the potatoes are tender, drain well and mash. Mix till fluffy by hand or mixer. Add milk as needed. Stir in the onions, cabbage, and sour cream. Taste for seasoning. Serve immediately or keep warm on a very low burner. This dish can be prepared ahead of time: Cover and refrigerate, when ready to serve, heat up Colcannon in the microwave or oven.
