Aebleskiver

Ingredients

  • 2 egg whites
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon white sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 egg yolks
  • 4 tablespoons butter, melted
  • 2 cups buttermilk (or ¾ C beer plus 1 ¼ C milk)
  • 1 cup vegetable oil for frying
  • vanilla, cardamom, or cinnamon to taste

Instructions

  1. In a glass or metal bowl, beat the egg whites until they can hold a stiff peak. Set aside.
  2. Mix together the dry ingredients Whisk egg yolks, buttermilk, and melted butter together. Add to dry ingredients and gently mix, the batter will be lumpy. Gently fold in the egg whites last.
  3. Put about 1 tablespoon of vegetable oil or butter in the bottom of each cup of the aebleskiver pan and heat to medium (about 350 degrees). Pour in about 2 tablespoons of the batter into each cup (fill cups about ¾ full).
  4. By the time all the cups are filled it should be time to turn the first one. As soon as they get bubbly around the edge, turn them, roughly a ¼ turn. Allow the batter to run out of center. Turn again quickly using a wooden skewer (Danish cooks use a long knitting needle). Continue cooking, turning the ball to keep it from burning.
  5. Transfer aebleskivers to platter. Sprinkle with powdered sugar, and serve with raspberry jam.
  6. Makes approximately 48 aebleskivers.
